Baked APPLE CHIPS
You will need:
2 organic apples (I usually use whatever looks good at the farmer’s market that week, typically pick 2 different varieties: Fiji, golden delicious, red delicious, pink lady, gala all work well)
Sprinkle of cinnamon(optional)
Small pinch sea salt (optional)
Tools:
2 cookie sheets
parchement paper or non-stick baking mats
sharp knife or mandolin
To make:
Pre-heat oven to 200 degrees. Wash, core and thinly slice your apples with a mandolin (on thinnest setting) or very thin with an extra sharp knife. On two cookie sheets, over parchment paper lay out one layer of apple slices covering the whole tray.
[Optional instruction] Leave apples unseasoned for plain apple chips or jazz them up with a sprinkle of organic cinnamon and a pinch of sea salt. I hold my hand 18 or so inches above the apples to give them a light even sprinkle of seasoning.
Bake for 45 minutes in the over, then flip the apples and bake for another 35 – 45 minutes until the edges crisp up and your apples feel crispy. Enjoy immediately or store in an air tight glass container for 1 – 2 days (after that they lose their crispness).
