Recipe: Sunny D Smoothie
As you know, I ♥ smoothies. This is not a secret. I love this particular smoothie combination because it feels like the transition from Summer to Autumn. You get a little bit of the end of summer crop, with the peaches and nectarines, and then the first sprinkles of fall with deliciously sweet and hearty carrots.
Enjoy this smoothie in the morning for a light breakfast, or an afternoon snack. I made this smoothie right before 3 back-to-back coaching groups and it gave me enough fuel to power through all of my sessions without even a passing glance. I hope you enjoy it as much as I do!
This smoothie is packed fiber, protein and tons of nutrients, see for yourself:
Carrot: Vitamin C, Vitamin B6, Folate, Pantothenic Acid, Iron, Potassium and Copper, and a very good source of Dietary Fiber, Vitamin A, Vitamin K and Manganese.
Peach:Dietary Fiber, Vitamin A, Niacin and Potassium, and a very good source of Vitamin C.
Nectarine: Dietary Fiber, Vitamin A, Niacin and Potassium, and a very good source of Vitamin C.
Coconut Water:Vitamin C, Riboflavin and Calcium, Magnesium, Potassium and Manganese.
Chia Seeds:Omega-3 fatty acid, protein, Calcium, Phosphorus, and a very good source of Dietary Fiber and Manganese.
You'll need:
1 medium carrot, peeled and chopped
1/2 fresh nectarine (in season right now!)
4-5 slices frozen peaches (peel and freeze ahead of time)
handful of ice
large pinch of chia seeds
fill to cover 1/2 the contents with organic coconut water
BLEND for a good 60-90 seconds in your high speed blender (I used a Vitamix), adding more liquid to your desired consistency. Enjoy!
