Clean Strawberry Vinaigrette Recipe
One of the areas that I see a lot of confusion in people's diets are around sauces, salad dressings and most condiments for that matter. When I do food store tours for my clients I typically take them to the salad dressing aisle and have them pull a dressing that is a "household name" and then start reading off the ingredients. This one is always a shocker as most store-bought salad dressings are laden with sugar and chemicals. No bueno.
However, I'm a gal who loves a good salad and I am all about non-boring flavors. You know this, I don't believe in sacrificing health for flavor, or vice versa. That means the salad dressing is an important part to making a tasty salad complete. I love homemade dressings that are seasonal and so packed with flavor that you aren't missing the store-bought variety ONE bit.
With homemade dressing, and just like the rest of my recipes, I strive for high quality ingredients. I typically start with a base of oil, vinegar, honey and/or mustard so having high quality ingredients is a must. And, since olive trees and grape vines are typically heavily sprayed while harvesting always try to choose organic when going for oils and vinegars. I always find great prices on oils and vinegars here.
Since strawberries are in season in the summer I thought I would show you a quick and easy Strawberry Vinaigrette that is sure to be a crowd favorite, inspired by this recipe. Clean Strawberry Vinaigrette
2 cup strawberries 2 cloves of garlic 2 Tbsp balsamic vinegar 1 tbsp red wine vinegar 1 tbsp extra virgin olive oil 1 tsp Dijon mustard Juice of 1/2 lemon Pinch of salt + pepper
In a high speed blender like a Blendtec or Vitamix, add ingredients in the order listed above.
Gradually increase blending speed and blend for 30-60 seconds until smooth.
Store in an airtight glass jar in the refrigerator for up to 2 weeks.
