Recipe: Grilled Swordfish Vegetable + Pineapple Skewers
Summer is in full swing and that means its time to fire up that grill, baby!
I just love me some BBQ and since I'm not a meat-eater (I do enjoy seafood, though), summer grillin' is all about corn, veggies + swordfish skewers -- my faaaaavorite.
Skewers of any kind (vegetable, fruit, chicken, beer or fish) are a staple around many tables in the summertime. They're easy, you get a lot of bang for your buck with the ingredients and everyone loves to eat food off a stick, right?
The next time you're planning your afternoon BBQ menu, try out this recipe for some happy bellies and big smiles. Tons of flavors. This one is a great one for kids to help with because its easy and fun and don't worry about getting every skewer perfect, as long as there is a little bit of this and that on each one, it works!
You Will Need:
1/2 pound high quality raw Swordfish per person, in small chunks
1 medium red onion, rough chop
1 yellow pepper, rough chop
2 cups fresh pineapple chunks, optional
Olive oil, to drizzle
Sea salt, to taste
Pepper, to taste
Garlic powder, optional
Paprika, optional
Supplies:
Wooden skewars, soaked for 10 - 15 minutes in water
To make:
Start by chopping all ingredients while the wooden skewers soak and lay out ingredients on a chopping block. One ingredient at a time, spool the fish, onion, pepper, pineapple (repeat) onto the skewars leaving about 2+ inches of wooden skewers unfilled at the bottom. This will allow you to have some space to fold and flip the skewers and easily eat them after they are cooked. Continue with all skewers until you're out of ingredients.
To season (optional), drizzle olive oil over the prepared skewers before grilling. Spinkle with sea salt, cracked pepper, garlic powder and paprika (all optional). Another variation would be to forego the seasoning and instead marinade in a teryaki sauce for a minimum of 15 mins.
Over medium heat on the grill, place skewers on the grill diagonally (for nice grill marks) and cook 2 - 5 minutes on each side until the flesh of the fish is white and cooked through completely, and the vegetables are cooked (they will darken in color).
Remove from heat, let cool + Enjoy!!
