Buffalo Cauliflower "Wings" Recipe
You are seriously in for a treat. This recipe is already a favorite. Cauliflower seems to be one of those vegetables that everyone loves and I find that cauliflower is one of the heartier veggies, so it makes a great side dish or starter that has substance.
There are very few things I feel I "miss out" on as a non-meat eater, but for some reason buffalo wings (not the meat but the flavor) are one of them. Maybe it's because they're spicy and served with celery and creamy dip... all things I love. But there IS something about that vinegar-cayenne-chili combo of the sauce and I've been searching for ways to recreate with a veggie friendly dish.
I've seen tons of recipes, like this one, for Buffalo Cauliflower Wings and couldn't wait to try my hand at it. I made mine vegetarian and gluten-free.This recipe was such a favorite there was not ONE floret left!
Buffalo Cauliflower "Wings"
1 Head of Cauliflower 3 TBSP Extra Virgin Olive Oil Pinch of Sea Salt + Cracked Pepper 1 TSP Granulated Garlic 1 TBSP Vegan Butter, melted (I used Earth Balance Soy-Free version) 1/2 cup Bella's Buffalo Wing Sauce (don't worry, it's vegetarian)
Pre-heat oven 450* degrees. Wash and chop cauliflower into large florets keeping most of the stems on. On a lined baking sheet, spread out cauliflower florets and then drizzle olive oil, toss to coat evenly. From above sprinkle sea salt, cracked pepper and garlic, toss again to season evenly. Bake for 20 minutes, mixing after 10 minutes with a spatula.
In a microwave safe bowl, melt the butter for 10 seconds. Stir in buffalo sauce. Pour the mixture over the baked cauliflower and coat evenly. Return the cauliflower to the oven for 5 minutes.
Let cool and enjoy! Serve as a side dish or add as an appetizer next to celery sticks and plain Greek yogurt. Enjoy! *Gluten-free *Vegetarian
