Recipe: Vegan Avocado Ranch Dressing
Me and avocado are best friends.
We go together like... margaritas and cinco de mayo.
Kidding, but serious.
This is a dressing that is a cross between a savory guacamole and a creamy ranch, yet dairy-free and packed with rich delicious flavor (vitamins, antioxidants + tons of healthy fats!). You can adjust the water in the recipe to make it a little thinner for salad dressings, or thicker for veggie dip. You can use this as a marinade or sauce for veggie burgers, fish tacos, you name it.
This is a 10 on the easiness scale. All you have to do is let an avocado ripen, I mean really ripen, and then add all ingredients to your high speed blender and have at it.
You will need:
1 medium avocado
1 small jalapeño
Juice of 3 limes
1 clove garlic
Small bunch green onions
1/2 olive oil
2 TBSP water (for consistency)
Pinch of sea salt
Pinch of cracked pepper
optional, squeeze of organic honey
BLEND all ingredients in a Vitamix or high speed blender, gradually increasing. Add in olive oil slowly to get consistency you like. I added in the water just so it would blend easier. Let blend for a good 1-2 minutes until fully incorporated, rich and creamy. *Vegetarian *Vegan *Gluten-Free
