Zesty Italian Dressing - Clean and Simple

Inspired by my trip to Italy for my brother’s wedding in 2019, I decided to make a healthier alternative to store bought Italian dressing. The shelf stable salad dressing you find at your local grocery store are packed with unhealthy oils and preservatives (for the most part). There are a few store bought brands I like but I much prefer making my own salad dressings and have experimented with honey balsamic vinaigrette, homemade Caesar dressing and honey mustard that I plan to put on the blog when I perfect.

For now, enjoy a delicious herby and satisfying at-home Italian dressing that comes together in minutes. This would me a great marinade for chicken or fish too.

you’ll need

  • 1 cup extra virgin olive oil

  • 1 cup red wine vinegar

  • 1.5 tablespoon organic Italian seasoning (I like the one from Simply Mills)

  • 1 clove of crushed or minced garlic

  • 1 tablespoon dijon mustard

  • 1 teaspoon garlic powder

  • a hefty pinch of salt and pepper

to make

In a bowl, whisk together all ingredients. Store in an airtight container in the refrigerator for up to 5 days. A mason jar works well so you can shake before serving since the oil and vinegar will separate. I like to serve this over a big chopped salad with fresh vegetables, black olives and sourdough crotons and a heaping tablespoon of grated parmesan cheese for an extra Italian flavor. If you are dairy-free you can sub with nutritional yeast or leave it out altogether. Enjoy!
